1/3 cup low-fat mayonnaise made with olive oil
1/3 cup nonfat plain greek yogurt
2 teaspoons lemon juice
1/4 teaspoon salt
3 cups chopped cooked chicken breast
1 medium red apple, diced
1 cup halved red or green grapes
1 cup sliced celery
1/4 cup chopped walnuts
Head of Lettuce or Spinach leaves
Mix mayonnaise, yogurt, lemon juice and salt in a large bowl until well blended. Next, add chicken, apple, grapes, celery and 1/4 cup of walnuts. Stir chicken mixture to ensure everything is coated well. Serve chilled on bed of lettuce or spinach.
Per serving: 300 calories; 11 g fat; 22 g carbohydrates; 30 g protein; 3 g fiber.
