Cilantro Lime Grilled Chicken with Avocado Salsa

Simply Delicious & Healthy 

Ingredients:

Chicken
  • 2 tbsp minced fresh cilantro
  • 2 1/2 tbsp fresh lime juice
  • 1 1/2 tbsp olive oil
  • 4 (6-ounce) skinless, boneless chicken breast
  • 1/4 tsp salt
  • Cooking spray

Salsa

  • 1 cup chopped plum tomato (about 2)
  • 2 tbsp finely chopped onion
  • 1 tbsp minced fresh cilantro
  • 2 teaspoons fresh lime juice
  • 1/4 teaspoon salt
  • 1/8 tsp freshly ground black pepper
  • 1 avocado, peeled and finely chopped

Directions:

Chicken

combine first cilantro, lime juice, olive oil & chicken in a large bowl, toss, and let stand 5 minutes. While chicken is marinating, coat grill pan with cooking spray, and heat over medium-high heat. Remove chicken from marinade, sprinkle chicken evenly with 1/4 teaspoon salt.  Add chicken to pan; cook 6 minutes on each side or until done. Cut Chicken into bite sized pieces.

Salsa

Combine tomato, onion, cilantro, lime juice, salt and pepper in a medium mixing bowl. Add avocado; stirring gently to ensure all ingredients are combined without smashing avocado. Serve salsa over chicken.

Note…You can serve Cilantro Lime Chicken W/ Avocado Salsa over rice (brown, white or rice pilaf)
