Ingredients
1 lb 95% lean hamburger meat
1 pkg taco seasoning
1 can petite diced tomatoes
2 cups water
1 cup multi-grain or WW elbow macaroni (uncooked)
Cheese sauce:
2 Tablespoons butter
2 tbsp flour
3/4 cup skim milk
1 cup 2% shredded cheddar cheese
1/2 tsp salt
1/2 tsp pepper
Directions
In large skillet cook meat over medium heat until brown and drain. Add in taco seasoning, diced tomato, water, and (uncooked) macaroni. Heat to a boil. Reduce heat and cover pan. Simmer 12-14 min until macaroni is tender.
While the above is cooking it’s time to make the cheese sauce.
Melt the butter in a saucepan. Whisk in the flour until smooth. Slowly add in the milk and bring to a boil. Whisk continuously until smooth. Sauce will slowly thicken. Remove from heat and add shredded cheddar cheese to milk mixture until melted. Add the salt and pepper. Finally, once hamburger/macaroni mixture if ready, pour the cheese sauce over. Stir gently to combine & serve.
